Cara Mangini

Cara Mangini, who comes from a family of traditional butchers, was one of the first official ‘vegetable butchers’ at Eataly in New York City, Cara is the author of the “Vegetable Butcher” column for TheKitchn.com as well as Executive Chef and owner of the vegetable-centric Little Eater, a produce-inspired restaurant, and an artisanal foods boutique in Columbus, OH. Cara has a Culinary Arts degree from the Natural Gourmet Institute in New York City, and recently authored The Vegetable Butcher – How to Select, Prep, Slice, Dice, and Masterfully Cook Vegetables from Artichokes to Zucchini.
