As Henry James said, “There are few hours in life more agreeable than the hour dedicated to the ceremony known as afternoon tea.” Afternoon tea, the quintessential English custom is, perhaps surprisingly, a relatively new tradition. This pause for tea became a fashionable social event during the 1880’s when society women would change into gowns, gloves and hats for their afternoon tea which was usually served in the drawing room between four and five o’clock. Well, that’s not going to happen here today. While we will be preparing some nice teas and perhaps the requisite cucumber sandwiches, our focus will be on the classic British desserts that might go with a nice, quiet afternoon tea.
