Bill Schroeder, owner and chef of the late, lamented Wild Bill’s in Lebanon, Ohio for six years, boasts a fresh from scratch approach to food preparation.  Bill uses local produce when available to create his “nothing is pre-made” philosophy of cooking.  Bill loves to share his secrets of preparing and seasoning Ohio’s best Cajun cuisine.
