“Classic Italian Grains"
with Dave Rawson

Join Dave for a great class. Both his and Wiley’s classes sell out quickly so don’t wait to register.

The passion for hearty, delicious Italian side dishes and main courses based on grain is shared by food lovers around the world. Learn how to make some of our favorites, as well as some great variations on each. Chef Dave will guide you thr ough recipes and techniques for mastering these classic grain dishes with his usual mix of science, finesse and enthusiasm.

Risotto

Dishes will include:

Polenta, both soft and firm, and seasonings and toppings for each.

Risotto, classic and contemporary treatments, and how to make Arancini, filled and fried rice balls, with the leftovers.

Farro, an ancient grain that has been re-discovered by today’s chefs, made into a delicious vegetable and herb-filled salad, and a rustic Italian soup.

Living in Germany and Israel definitely influenced DAVE RAWSON'S culinary tastes. He started his baking career with 10 years at Great Harvest Bread Company, then attended culinary school at Sinclair Community College. Dave’s first cooking position was with The Winds Café in Yellow Springs, where he met his mentor Chef Elizabeth Wiley from Meadowlark and was offered a position as her Sous Chef. Dave says “it’s a great feeling when someone tells you that you have prepared the best meal they’ve ever had, and that is what keeps me excited about cooking.”
